Thanks for the tip. I know what you are talking about. I started using the 4 cheese salsa on my nachos and my family (including my son) can not get enough of them. I am making the nachos for the Superbowl.

that's a great tasty and fast recipe... and if you want it even a little more zesty Pace makes a good 4-cheese queso that can be used instead of the shredded cheese.

Tonight I have an appt and my husband is in-charge of our son. So that means I am responsible for having a quick meal already prepared or having a recipe my husband can make. So that takes us to Chicken Quesadillas. They are super easy and if you have canned chicken or pre-cooked chicken can be made in about 10 mins.

In a bowl combine:
1/2 cup of Pace Picante or Salsa (you choose)
1 can or 1 cup of cooked chicken
1/2 cup of shredded cheese (more if you like them cheesy)
1/2 a tomato or other veggie of your choice

To make the quesadillas, spray a frying pan with cooking spray and then using med/high heat place 1 tortilla (either burrito or taco size) in the pan. Heat it for 10 sec so it gets warm then add half of the mixture (if burrito size) or 1/3 for taco size on 1 side of the tortilla. Fold the other side over the top of the mixture and heat. Cook for about 1-2 minutes on each side until they are browned. Cut into 4 pieces and serve.

This makes a great quick meal or snack and all the ingredients are to taste.
