"My favorite Mexican Restaurant (I never thought to find a good one in Kansas but this one is tops!!!)...serves really awesome shrimp enchiladas, and it is just shrimp seasoned with a few spices,( I used a dash or two of creole seasoning...just don't let on that it's not all mexican seasonings) sear them on a comal or larger griddle with a bit of small diced onion, center them on a corn tortilla and add the salsa verde fold over and place in pyrex dish...when dish is full, spread more salsa verde on top add just a little cheese over it (4 cheese mexican) and pop it in the oven at 375 for about 15 to 20 minutes or until the cheese is bubbly. Delicious. I loved the Tequila Lime over it but someone did away with it! Bad Pace!! Shame on you! But I could never leave Pace over it because only Pace can make the best salsas!!!"
