I wanted to add that we usually use the " OPA'S" brand ring of sausage in the South Texas Cabbage recipe.
I omitted that information when I originally posted the recipe yesterday.

South Texas Cabbage (made on stove top)

Ingredients:
1 large head of cabbage
1 large onion-(1015 Texas onion size)
1 16 ounce jar PACE picante sauce(mild,medium or hot)
1 12 ounce package hickory or mesquite smoked bacon
1 ring of sausage - (your preference)
Bolner's Brand Fiesta Fajita seasoning (salt-free)
16 ounces of water

You will need one (1) large stock pot

Chop onion, bacon (1/2 slices),sausage (1/2 slices)
Saute on medium heat until bacon is cooked well
Drain grease and set off stove top

Cut cabbage head in half-cut out heart-slice 1/4 wide-add to pot
Add PACE picante sauce-take empty jar-fill with water-shake, and add to pot
Add two (2) tablespoons of fajita seasoning

Set back on stove top-Cook well on medium to high heat until cabbage is very tender-stirring occasionally

May be kept warm in a crock pot for serving
