Cook it up with Picante sweepstakes Pork Paprikash recipe by Lori McLain

This is a VERY easy pork paprikash ( you can use chicken or turkey if you like), using PACE picante sauce :

Ingredients:
1 1/2 lb ground lean pork ( or chicken or turkey)
2 C thinly sliced onions
1 C thinly sliced bell peppers ( red, green or mixed colors)
1 T paprika
2 C PACE Picante sauce
6 oz tomato paste
1/2 C water
salt & peppr to taste
12 oz high-fiber or whole wheat pasta of your choice, cooked according to pkg directions
Optional : 1/2 C shredded parmesan cheese

Directions:

Preheat oven to 350 degrees. Prepare pasta according to package directions, drain, and set aside. Spray large non-stick skillet with cooking spray. Mix 2 T of the PACE picante sauce into the ground pork and place in skillet. Add onions and peppers. Saute and cook pork onions and peppers for about 7-8 minutes over medium-high heat, until meat is done and veggies are almost tender. Sprinkle with paprika, then stir in Pace picante sauce, tomato paste and water. Salt & Pepper to taste if desired. Stir together well, then cover and cook over medium heat for about 10 minutes. Spray a 9 X 13 baking dish with cooking spray. Place a little of the sauce in the bottom of the dish. Cover with the prepared cooked pasta. Cover pasta with the remaining sauce, stirring a little down into the pasta, mixing slightly. You can sprinkle with optional parmesan cheese on the top if desired. Place in 350 degree oven for 30-40 minutes, until bubbling. Remove from oven and let rest for 5 minutes before serving. Serves 6-8.
