I almost always use the Hot . It's addicting! You start out with Mild, then move to Medium and then you just gotta have the Hot! When I'm cooking for friends that I know aren't hot crazy I use the medium. If all I have is hot (which is most of the time) I just use less of it. About half what's called for and add canned tomatoes or tomato sauce - even spaghetti sauce - to make up the difference.

Tambra, I too generally use the Medium. I bought the Hot once and it was just ... too much! I added it to my chicken and rice soup though, along with a can of diced tomatoes. The jalapeno seeds that popped up in the soup were still pretty hot but the overall heat was much more bearable. Since then I've stuck to buying the medium heat. I will buy the mild if the store is out of medium. We buy the gigantic plastic containers because we use it so often the smaller jars don't last very long. :)

Karen I've never had jambalaya but it sounds like something my family and I might like. Do you have a recipe you like to use? There are so many great recipes on here I am easily lured into surfing through them for hours on end. If your recipe is somewhere here would you mind linking it?

I don't have any kids myself, but being a kid at heart, I'm the one who can't take a lot of heat in my meals. We'll usually go with the mild or medium picante, so long as I have a good supply of soft drinks on hand.

My boyfriend and best friend, however, are spicy to the max fans, so whenever they feel the need, they'll cook up some jambalya or something equally hot to satisfy their craving while I fend for myself.

As a result, we try to keep the entire spectrum of Pace products on hand at our house.

He Lisa :) I use medium and mild. I have a 10 year old son, he still isn't into anything *hot*.

About using what I have on hand. Well, if it calls for hot and I have mild, then the answer is yes. But if it calls for mild and for some reason I only have hot, then I usually grab my coat, jump in the car and head to the store. Because it never fails, I will need the milder flavor the next day :)

We usually use Medium Salsa and Picante sauce in our household. It's spicy without burning my tongue and adds a real kick to anything I use it in. The kids used to like the mild but even they have come around to liking the medium best now that they're a little older. So far I have never used the hot one.

Do you use a different variety for one recipe than you would for another? If you only had hot on hand and the recipe called for medium, would you still use it? Would you adjust the amount or add other ingredients to get just the right balance of flavors?
